Homemade Peanut Butter Cups

Reese’s peanut butter cups have always been my favorite candy.  However, they are definitely not good for you.  During quarantine, I decided to make my own “healthier” peanut butter cups from scratch.  Though any dessert is certainly not healthy, this is a much better option than Reese’s peanut butter cups with all of the artificial ingredients.  Plus, these are easy to make and taste even better than a Reese’s cup! I promise these will not disappoint. My family loves them!

Ingredients:

⅔ cup of peanut butter (or nut butter of your choice)

3 cups of chocolate (I use chocolate chips)

1 tablespoon of powdered sugar (optional)

1 tablespoon of honey (optional)

Sea salt (optional)

Steps:

  1. Grab a muffin tin, and line it with cupcake wrappers. This recipe is designed to make 12 PB cups.

  2. Place 3 cups of chocolate in a microwave safe bowl, and microwave for 2 minutes, stir, and microwave again until the chocolate is fully melted.

  3. Mix ⅔ peanut butter, powdered sugar, and honey in a bowl.  You can just use PB if you want, but I like adding the powdered sugar and honey for extra flavor and texture for the inside.

  4. Grab the muffin tin and scoop melted chocolate into the bottom of each wrapper.  You just need to coat the bottom.

  5. Place a spoonful of peanut butter in the center of each chocolate cup, and add more after filling all if desired.

  6. Cover the peanut butter with the rest of the melted chocolate.

  7. Sprinkle sea salt on top (not necessary, but makes such a difference) and place in the freezer for an hour.  Enjoy! (Store in the fridge to keep them from melting)

P.S.

For a healthier take on this recipe, use dark chocolate, stevia sweetened chocolate, and/or organic nut butters.
